Ingredients

  • 4 ½ sticks ITO EN Matcha Green Tea powder
  • 3 tablespoons boiling water
  • 5g powdered gelatin
  • 2 egg yolks
  • 200ml milk
  • 150ml fresh cream
  • Fresh strawberries for decoration

Preparation

  1. Dissolve and blend the matcha powder in boiling water. Add the powdered gelatin and let it soak. Set aside.
  2. Beat the egg yolks in a pot and stir in the milk. Cook over low heat, stirring constantly until creamy and bubbles disappear. Remove from heat.
  3. Add the matcha and gelatin mixture to the pot and mix well. Strain into a bowl.
  4. Cool over ice water, stirring occasionally until thickened.
  5. Add the fresh cream and mix until incorporated.
  6. Refrigerate before serving and decorate with fresh strawberries.
